Preparing the Rice

    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions, usually using a rice cooker or pot with a lid.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a separate small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour the mixture over the warm rice and gently fold to combine. Allow the rice to cool to room temperature.

Preparing the Ingredients

    Rehydrate the Wakame

    Soak the wakame in warm water for about 10 minutes until it expands. Drain and chop into small pieces.

    Prepare the Avocado

    Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into thin slices.

    Chop the Scallions

    Thinly slice the scallions, using both the white and green parts.

Assembling the Roll

    Prepare the Rolling Station

    Lay a bamboo sushi mat on a flat surface and place a nori sheet, shiny side down, on the mat.

    Spread the Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Spread the rice evenly over the nori, leaving about 2 inches at the top edge.

    Add the Fillings

    Spread a layer of cream cheese over the rice. Then add the chopped wakame, sliced avocado, pastrami smoked salmon, and scallions in the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling it away from you, tucking the filling in as you go. Roll tightly but not too tight to avoid squeezing out the fillings.

    Seal the Roll

    Once rolled, dip your fingers in water and moisten the edge of the nori to seal the roll. Let it sit seam-side down for a minute.

Finishing Touches

    Slice the Roll

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth after each cut to ensure clean slices.

    Serve with Dipping Sauce

    Arrange the sushi rolls on a plate and drizzle with sweet tamari. Serve with umami mayo on the side for dipping.
