Zucchini Noodles

    Prepare Zucchini Noodles

    Using a spiralizer, turn the zucchini into noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips.

    Cook Zucchini Noodles

    In a skillet, heat olive oil over medium heat. Add the zucchini noodles and sauté for about 3-4 minutes until tender. Season with salt and black pepper. Remove from heat and set aside.

Pan Roasted Shiitake Mushrooms

    Sauté Garlic and Mushrooms

    In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Then add sliced shiitake mushrooms and fresh thyme. Cook for about 5-7 minutes until the mushrooms are browned and tender.

Oven Roasted Tomatoes

    Prepare Tomatoes

    Preheat the oven to 200°C (400°F). Place cherry tomatoes on a baking sheet. Drizzle with balsamic vinegar, olive oil, salt, and black pepper. Toss to coat.

    Roast Tomatoes

    Roast in the oven for 15-20 minutes until they burst and caramelize. Remove from the oven and set aside.

Marsala Butter Sauce

    Prepare Sauce

    In the same skillet used for the mushrooms, pour in Marsala wine and bring to a simmer. Allow it to reduce by half, which should take about 5 minutes.

    Finish Sauce

    Whisk in the butter until melted and combined. Stir in chopped parsley and keep warm on low heat.

Shrimp

    Cook Shrimp

    In the same pan, add olive oil and heat over medium-high heat. Season shrimp with salt and black pepper. Add shrimp to the pan and cook for about 2-3 minutes on each side until pink and opaque.

    Combine All Ingredients

    Once the shrimp are cooked, add the sautéed mushrooms and roasted tomatoes to the pan. Pour the Marsala butter sauce over the mixture and gently toss to combine.

Assembly

    Plate the Dish

    To serve, place a bed of zucchini noodles on each plate, top with the shrimp and mushroom mixture, and drizzle with any remaining sauce. Garnish with additional parsley if desired.
