Base Ingredients

Method

Preparation

  1. 1

    Sauté the Vegetables

In a large pot over medium heat, melt the butter. Add the chopped onion, celery, and carrot. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 2

    Add Garlic

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

  3. 3

    Create the Roux

Sprinkle the flour over the vegetable mixture and stir well to combine. Cook for 2-3 minutes to remove the raw flour taste.

  4. 4

    Add Chicken Broth

Gradually whisk in the chicken broth, ensuring there are no lumps. Bring to a simmer.

Cooking the Chowder

  1. 5

    Add Seafood

Once the broth is simmering, add the shrimp, scallops, white fish, and clams. Stir to combine.

  2. 6

    Season the Chowder

Add dried thyme, bay leaves, salt, and black pepper. Stir well and let simmer for about 10 minutes until the seafood is cooked through.

  3. 7

    Add Cream

Stir in the heavy cream and bring the chowder back to a gentle simmer. Cook for an additional 5 minutes.

Finishing Touches

  1. 8

    Garnish and Serve

Remove the bay leaves. Ladle the chowder into bowls, garnish with chopped fresh parsley, and serve hot.
