For the Roast Atlantic Haddock

Prepare the Haddock
Preheat your oven to 400°F (200°C).

Season the Haddock
Pat the haddock fillets dry with paper towels. Drizzle with olive oil, then sprinkle with salt and black pepper.

Roast the Haddock
Place the seasoned fillets on a baking sheet lined with parchment paper. Roast in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.

Finish with Lemon
Remove from the oven and drizzle with fresh lemon juice before serving.
For the Lobster Mashed Potatoes

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth and creamy.

Incorporate Lobster
Fold in the lobster meat, and season with salt and black pepper to taste. Keep warm until ready to serve.
For the Nantucket Pan Sauce

Sauté the Vegetables
In a saucepan over medium heat, melt 2 tablespoons of butter. Add the chopped red onion and red bell pepper. Sauté until softened, about 5 minutes.

Deglaze with White Wine
Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pan. Allow to simmer until reduced by half.

Finish the Sauce
Stir in the cornichon and remaining 2 tablespoons of butter, then add the crispy bacon. Mix well and remove from heat.
