Calamari

Cherry-Pepper Vinaigrette

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

In a bowl, combine the flour, salt, and black pepper. Dredge the calamari rings in the flour mixture, ensuring they are well coated.

  2. 2

    Fry the Calamari

Heat the oil in a deep skillet or fryer over medium-high heat. Once hot, add the calamari rings in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Cherry-Pepper Vinaigrette Preparation

  1. 3

    Make the Vinaigrette

In a bowl, whisk together the olive oil, red wine vinegar, chopped cherry peppers, minced garlic, salt, and black pepper until well combined.

Marinara Sauce Preparation

  1. 4

    Cook the Marinara Sauce

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. Add the crushed tomatoes, oregano, salt, black pepper, and fresh basil. Simmer for 15-20 minutes, stirring occasionally.

Serving

  1. 5

    Plate the Dish

On a serving platter, arrange the fried calamari. Drizzle with cherry-pepper vinaigrette and serve with marinara sauce on the side. Garnish with grated Parmesan cheese and pepper rings.
