Preparing Sushi Rice

Rinse the Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium pot, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix together 3 tbsp rice vinegar, 1 tbsp sugar, and 1 tsp salt until dissolved. Gently fold this mixture into the warm rice and let it cool to room temperature.
Preparing Spicy Tuna Mix

Chop the Tuna
Dice the 8 oz of fresh tuna into small cubes.

Mix Ingredients
In a bowl, combine the diced tuna, 2 tbsp sriracha, 2 tbsp mayonnaise, 1 tsp sesame oil, and 2 tbsp chopped green onions. Mix well and set aside.
Assembling the Sushi

Prepare Nori
Place a nori sheet shiny side down on a bamboo sushi mat.

Spread Rice
Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge clear.

Add Fillings
In the center of the rice, add a line of the spicy tuna mix, followed by a row of julienned cucumber and a sprinkle of tempura crunch.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a bit of water.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces, wetting the knife between cuts to prevent sticking.
Serving

Plate the Sushi
Arrange the sushi pieces on a serving plate. Drizzle with spicy mayo and garnish with additional sriracha to taste.
