Method

For the Oven Roasted Salmon

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Salmon

    In a bowl, mix olive oil, lemon juice, garlic powder, salt, and black pepper. Brush this mixture over the salmon fillets.

    Roast the Salmon

    Place the salmon fillets on a baking sheet lined with parchment paper. Roast in the preheated oven for 12-15 minutes or until cooked through.

For the Roasted Cauliflower

    Prepare the Cauliflower

    Cut the cauliflower into florets and place them in a bowl.

    Season the Cauliflower

    Drizzle olive oil over the cauliflower florets, then sprinkle with salt, black pepper, and paprika. Toss to coat evenly.

    Roast the Cauliflower

    Spread the seasoned cauliflower on a baking sheet and roast in the oven alongside the salmon for about 20-25 minutes, or until tender and golden brown.

For the English Peas

    Cook the Peas

    In a small saucepan, bring water to a boil and add the frozen English peas. Cook for 2-3 minutes until heated through.

    Season the Peas

    Drain the peas, return to the saucepan, and add butter, salt, and black pepper. Stir until the butter is melted and peas are coated.

For the Dill Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the butter over low heat. Allow it to cool slightly.

    Prepare the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and lemon juice until pale.

    Combine and Whisk

    Place the bowl over a saucepan with simmering water, and continuously whisk while slowly adding the melted butter until the sauce thickens.

    Add Dill and Season

    Remove from heat, stir in chopped dill, and season with salt to taste.
