Prepare Dashi Broth

    Soak Kombu

    In a pot, combine dried kombu and water. Let it soak for about 30 minutes.

    Heat Dashi

    After soaking, turn the heat to medium and bring the mixture to a simmer. Just before it starts to boil, remove the kombu.

    Add Bonito Flakes

    Add the dried bonito flakes to the pot and let it simmer for another 5 minutes.

    Strain Broth

    Strain the broth using a fine mesh sieve or cheesecloth, discarding the bonito flakes. Set the clear dashi broth aside.

Prepare Soup

    Sauté Mushrooms

    In a skillet over medium heat, add the shiitake mushrooms and mirin. Sauté for about 5-7 minutes until the mushrooms are tender and glazed.

    Prepare Tofu

    While the mushrooms are cooking, cut the firm tofu into small cubes and set aside.

    Combine Ingredients

    In a pot, bring the prepared dashi broth to a gentle simmer. Add the white miso paste and stir until dissolved.

    Add Tofu and Mushrooms

    Add the sautéed shiitake mushrooms and cubed tofu to the pot. Cook for an additional 3-5 minutes, until the tofu is heated through.

    Prepare Nori and Garnish

    Cut the nori sheets into strips and slice the scallions finely. Serve the soup in bowls, garnishing with nori, togarashi, and scallions.
