Method

Preparation

  1. 1

    Prepare the Vegetables

Wash and dice the zucchini and red bell pepper into small cubes. Set aside.

  2. 2

    Prepare the Shrimp

In a pot of boiling salted water, cook the shrimp for 2-3 minutes or until they turn pink and opaque. Drain and let cool, then chop into smaller pieces.

  3. 3

    Prepare the Crab

If using fresh crab, steam it until cooked and then shred it. If using canned crab, drain it well.

  4. 4

    Prepare the Avocado

Cut the avocado in half and remove the pit. Scoop the flesh out with a spoon and dice it into small cubes.

  5. 5

    Chop the Cilantro

Wash the cilantro leaves, chop them finely, and set aside.

Assembly

  1. 6

    Layer the Ingredients

In a small serving glass or bowl, start by layering the diced zucchini at the bottom.

  2. 7

    Add Shrimp and Crab

Next, add a layer of chopped shrimp followed by a layer of crab meat.

  3. 8

    Add Red Pepper and Avocado

Top the crab layer with the diced red bell pepper and then add a layer of diced avocado.

  4. 9

    Pour the Sauce

Drizzle the Mexican cocktail sauce over the avocado layer, followed by a dollop of lime yogurt.

  5. 10

    Garnish and Serve

Sprinkle the chopped cilantro on top and serve immediately with crisp tortilla chips on the side.
