Preparation

    Cook the Lobster

    Bring a large pot of salted water to a boil. Add the whole Maine lobsters and cook for about 8-10 minutes, or until bright red and cooked through. Remove from water and let cool. Once cooled, remove the meat from the claws and tail, chop it into bite-sized pieces and set aside.

    Prepare the Zucchini

    While the lobster is cooling, wash the zucchini and slice it thinly into rounds or half-moons depending on your preference.

    Make Garlic Chips

    Peel and thinly slice the garlic cloves. In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the garlic slices and cook until they are golden and crispy. Remove from the oil and place on paper towels to drain.

Cooking

    Cook the Spaghetti

    In the same pot used for the lobster, bring salted water to a boil again. Add the spaghetti and cook according to package instructions until al dente. Drain and reserve about 1 cup of pasta water.

    Combine Ingredients

    In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the zucchini and sauté for about 3-4 minutes until tender. Pour in the white wine and let it reduce for about 2-3 minutes.

    Add Lobster and Sauce

    Stir in the chopped lobster meat and lobster butter into the skillet. Mix well until the lobster butter melts and combines with the zucchini and wine. Add the cooked spaghetti and toss everything together, adding reserved pasta water as needed to create a sauce.

    Finish with Tomato Relish

    Remove the skillet from heat and stir in the tomato relish. Adjust seasoning with salt and pepper to taste.

Serving

    Plate the Dish

    Serve the lobster spaghetti in bowls or plates. Garnish with crispy garlic chips, fresh parsley, and a sprinkle of lemon zest for added flavor.
