Omelette Preparation

Prepare Asparagus
Trim the ends of the asparagus and cut into 1-inch pieces. Blanch in boiling water for 2-3 minutes, then transfer to an ice bath to stop cooking. Drain and set aside.

Mix Ingredients
In a mixing bowl, whisk together the eggs, salt, and pepper until well combined. Add the blanched asparagus and lobster meat, gently folding them into the egg mixture.

Cook Omelette
In a non-stick skillet, melt 2 tablespoons of butter over medium heat. Pour the egg mixture into the skillet and cook until the edges begin to set, about 2-3 minutes. Add dollops of cream cheese on top and fold the omelette in half. Cook for an additional 2 minutes until fully set. Slide onto a plate.

Cook Home Fries
In a large skillet, heat olive oil over medium-high heat. Add diced potatoes, onion, paprika, salt, and pepper. Cook, stirring occasionally, for about 15-20 minutes, until the potatoes are golden brown and crispy.
Lobster Gravy Preparation

Make Gravy Base
In a saucepan, combine lobster stock and heavy cream. Bring to a simmer over medium heat.

Thicken Gravy
In a small bowl, mix cornstarch with a tablespoon of cold water to make a slurry. Gradually stir the slurry into the simmering stock mixture. Cook for an additional 2-3 minutes until thickened. Stir in butter, salt, and pepper to taste.
