    Preparing the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to make fries.

    Frying the Potatoes

    In a large pot, heat vegetable oil over medium-high heat. Once hot, add the cut potatoes in batches, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

Garlic Butter

    Making Garlic Butter

    In a small saucepan, melt the unsalted butter over low heat. Add minced garlic cloves and cook until fragrant, about 2 minutes. Stir in chopped fresh parsley and remove from heat.

Lobster

    Preparing the Lobster

    Boil a large pot of salted water. Add the Maine lobster tails and cook for about 7-8 minutes or until the shells turn bright red. Remove from water, cool slightly, then extract the meat and chop it into bite-sized pieces. Drizzle with lemon juice.

Lobster Bisque

    Making Lobster Bisque

    In a pot, sauté shallots until translucent. Add lobster stock and bring to a simmer. Stir in tomato paste and cayenne pepper. Let simmer for about 10 minutes. Add heavy cream and cook for an additional 5 minutes, stirring occasionally.

Assembly

    Bringing It All Together

    On a serving plate, layer the crispy fries. Drizzle generously with garlic butter. Top with chopped lobster meat. Pour lobster bisque over the top and finish with crumbled queso fresco.
