Preparation

    Prepare Lobster Stock

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the lobster shells and cook for about 5 minutes until they turn red. Add the white wine and bring to a simmer. Allow to reduce for 5 minutes.

    Add Fish Stock

    Pour in the fish stock and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes, allowing the flavors to meld. Strain the stock into a bowl and set aside.

Cooking the Bisque

    Sauté Aromatics

    In the same pot, melt the remaining 2 tablespoons of butter. Add the diced shallots and minced garlic, cooking until the shallots are translucent, about 5 minutes.

    Add Tomato Paste

    Stir in the tomato paste and cook for an additional 2 minutes to enhance the flavors.

    Combine Stock

    Pour the prepared lobster stock into the pot with the shallots and garlic. Bring to a boil, then reduce to a simmer.

    Add Lobster Meat

    Add the lobster meat to the pot and let it cook for 5 minutes to heat through.

    Incorporate Cream

    Slowly pour in the heavy cream and stir well to combine. Allow it to simmer for another 10 minutes, stirring occasionally.

    Season the Bisque

    Season with salt and black pepper to taste. Adjust the seasoning as needed.

Serving

    Ladle the lobster bisque into bowls and garnish with fresh chives and parsley. Serve hot and enjoy!
