Preparation

    Prepare the Scallops

    Rinse the scallops under cold water and pat them dry with paper towels. Season lightly with salt and pepper.

    Prepare the Jalapeños

    Slice the jalapeño peppers in half lengthwise and remove the seeds for less heat, or leave some seeds if you prefer spicier bites.

    Wrap the Scallops

    Place one jalapeño half on top of each scallop. Wrap each scallop and jalapeño with a slice of bacon, securing it with a toothpick if necessary.

Cooking

    Cook the Scallops

    Preheat your grill or oven to 400°F (200°C). Arrange the bacon-wrapped scallops on a baking sheet or directly on the grill. Cook for 12-15 minutes, turning halfway through, until the bacon is crispy and the scallops are opaque.

    Prepare the Sauce

    While the scallops are cooking, in a small bowl, combine the sweet tamari sauce and pineapple chili sauce. Mix well until combined.

    Once the scallops are cooked, remove them from the heat, and drizzle the sweet tamari and pineapple chili sauce over the top. Serve immediately.
