Eggs

    In a non-stick skillet over medium heat, crack the eggs and cook until the whites are set and the yolks are still runny, approximately 3-4 minutes. Season with salt.

Tortillas

    Warm the Tortillas

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, until pliable and warm.

Beans and Rice

    Heat the Beans and Rice

    In a small saucepan, combine the red beans and cooked rice over medium heat. Stir occasionally until heated through, about 5 minutes.

Chorizo

    Cook the Chorizo

    In a skillet, cook the chorizo over medium heat, breaking it apart with a spatula until browned and cooked through, about 5-7 minutes.

Salsa

    Prepare the Salsa

    Chop the tomatoes, onion, jalapeño, and cilantro. In a bowl, combine these ingredients, add lime juice and salt to taste. Mix well.

Assemble

    Assemble the Huevos Rancheros

    On a serving plate, place two warm tortillas. Top each tortilla with the red beans and rice mixture, followed by the cooked chorizo, and then the sunny-side-up eggs. Spoon the housemade salsa over the top, sprinkle with crumbled queso fresco and fresh cilantro.
