Salad Preparation

Prepare the Greens
Wash the local greens thoroughly under cold running water. Pat dry with a clean kitchen towel or use a salad spinner to remove excess water. Place the greens in a large salad bowl.

Fry the Tomatoes
In the same skillet with a little of the rendered bacon fat, add the cherry tomatoes and cook over medium heat until they start to blister and soften, about 3-4 minutes. Remove from heat and let cool slightly.

Add Remaining Ingredients
Once the tomatoes have cooled, add them and the chopped bacon to the bowl with the greens. Sprinkle grated parmesan cheese over the top.

Mix the Dressing
In a medium bowl, combine the mayonnaise, sour cream, grated parmesan cheese, cracked black pepper, garlic powder, and lemon juice. Whisk together until smooth and creamy. Season with salt to taste.

Drizzle the creamy dressing over the salad mixture in the large bowl. Toss gently to combine everything evenly. Adjust seasoning if necessary.
