Fish Preparation

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Slowly whisk in the cold water until a smooth batter forms.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Combine Ingredients
In a large mixing bowl, combine the shredded cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well to evenly coat the vegetables. Set aside to let the flavors meld.

Mix the Sauce
In a small bowl, whisk together the mayonnaise, Sriracha sauce, lime juice, and garlic powder until smooth and well combined.
Assembling the Tacos

Warm the Tortillas
In a dry skillet, lightly warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

On each tortilla, place a piece of crispy fish, top with cabbage slaw, and drizzle with spicy mayo. Serve immediately.
