Preparing the Fish

Make the Tempura Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually add the cold sparkling water while whisking until the batter is smooth and free of lumps.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Haddock
Dip each haddock fillet into the tempura batter, allowing excess batter to drip off. Carefully place the battered fillets into the hot oil and fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Combine Ingredients
In a small bowl, mix together the mayonnaise, dijon mustard, lemon juice, capers, and fresh dill until well combined. Adjust seasoning to taste.
Assembling the Sandwich

Prepare the Buns
Slice the brioche buns in half and lightly toast them if desired.

Layer the Ingredients
Spread a generous amount of bay sauce on the bottom half of each bun. Place a fried haddock fillet on top, followed by a layer of sliced pickles and a lettuce leaf. Top with the other half of the bun.
