Crab Cakes

    Prepare the Mixture

    In a large bowl, combine the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, and egg. Mix gently until well combined, being careful not to break the crab meat too much.

    Form the Cakes

    Add the bread crumbs to the mixture and stir until fully incorporated. Form the mixture into 4 equal-sized patties.

    Cook the Crab Cakes

    Heat olive oil in a skillet over medium heat. Cook the crab cakes for about 4-5 minutes on each side or until golden brown and heated through. Remove from heat and set aside.

Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until completely melted. Remove from heat and let it cool slightly.

    Whisk the Egg Yolks

    In a bowl, whisk together the egg yolks and lemon juice until the mixture is pale and thick.

    Combine Mixture

    Slowly drizzle the melted butter into the egg yolk mixture while whisking continuously until the sauce is smooth and thick. Season with salt and cayenne pepper, and set aside.

Poached Eggs

    Boil Water

    Bring a pot of water to a gentle simmer over medium heat. Add a splash of vinegar to help the eggs hold their shape.

    Poach the Eggs

    Crack each egg into a small bowl and gently slide it into the simmering water. Cook for about 3-4 minutes for runny yolks. Remove with a slotted spoon and set aside.

Home Fries

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. Pat dry with a paper towel.

    In a skillet, heat olive oil over medium-high heat. Add the potatoes, salt, black pepper, and paprika. Cook for about 15-20 minutes, stirring occasionally, until golden brown and crispy.

Assembly

    On a plate, place a crab cake and top it with a poached egg. Drizzle with hollandaise sauce, and add slices of avocado seasoned with Old Bay. Serve with home fries on the side.
