Mousse Preparation

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Stir occasionally until completely melted and smooth. Remove from heat and let it cool slightly.

    Whisk the Eggs and Sugar

    In a separate mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale and fluffy, about 5 minutes. You can use an electric mixer for better results.

    Combine Chocolate with Egg Mixture

    Slowly pour the melted chocolate mixture into the egg mixture, stirring gently to combine. Add the vanilla extract and mix until smooth.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip; it should be light and fluffy.

    Fold in Cream

    Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the mixture. The mousse should be light and airy.

    Chill the Mousse

    Divide the mousse into serving dishes or glasses. Refrigerate for at least 2 hours or until set.

    Prepare the Whipped Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip the mixture until soft peaks form.

    Top the Mousse

    Once the mousse is set, remove it from the refrigerator and dollop the whipped cream on top of each serving. Optionally, you can garnish with chocolate shavings or cocoa powder.
