Method
Preparation
- 1
Preheat Oven
Preheat your oven to 425°F (220°C) to ensure it's hot when the cakes go in.
- 2
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 20-second intervals, stirring after each, until fully melted and smooth.
- 4
Mix Sugar and Eggs
In a separate bowl, whisk together granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.
- 5
Combine Mixtures
Pour the melted chocolate mixture into the egg mixture, then add vanilla extract, mixing until well combined.
- 6
Add Flour and Salt
Gently fold in the all-purpose flour and a pinch of salt until just incorporated, being careful not to overmix.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 8
Bake Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.
- 9
Cool and Serve
Remove from the oven and let cool for 1 minute. Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately with a scoop of vanilla ice cream on the side.
