Preparation of Sushi Rice

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using 1 cup of rice to 1.2 cups of water. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice while it's still warm. Set aside to cool completely.

Prepare the Seafood
If not already prepped, cut the tuna, salmon, and yellowtail into thin strips, similar in size to the cucumber.
Assembling the Rolls

Lay Out Nori
Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.

Add Sushi Rice
With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the sushi mat, carefully roll the nori away from you, pressing gently to keep the roll tight. Seal the edge with a little water.

Slice the Rolls
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
Serving

Arrange the sliced rolls on a plate. Serve with wasabi mayo on the side for dipping.
