    Prepare the Calamari

    Clean the calamari by removing the head, guts, and skin. Rinse well under cold water and slice the body into 1/2 inch rings.

    Prepare the Breading Station

    In a medium bowl, mix the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Frying

    Heat the Oil

    In a large, heavy pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread in; if it sizzles, it's ready.

    Bread the Calamari

    Dip each calamari ring into the flour mixture, then into the beaten eggs, and finally coat it with breadcrumbs. Ensure each ring is evenly coated.

    Fry the Calamari

    Carefully place the breaded calamari rings into the hot oil in batches, making sure not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
