Method
Waffle Preparation
- 1
Prepare the Waffle Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined. In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
- 2
Combine Ingredients
Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix; a few lumps are okay.
- 3
Preheat the Waffle Iron
Preheat your waffle iron according to the manufacturer's instructions.
- 4
Cook the Waffles
Pour an appropriate amount of batter onto the preheated waffle iron and cook until golden brown and crisp, about 5-7 minutes. Repeat with remaining batter.
Berry Preparation
- 5
Marinate the Berries
In a medium bowl, combine mixed berries, Grand Marnier, and sugar. Toss gently to coat the berries and let them marinate for at least 15 minutes.
Mascarpone Preparation
- 6
Whip the Mascarpone
In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium speed until soft peaks form.
Candied Pecans Preparation
- 7
Candy the Pecans
In a skillet over medium heat, combine pecan halves, sugar, and water. Stir frequently until the sugar dissolves and the mixture thickens, about 5-7 minutes. Spread the pecans on parchment paper to cool.
Assembly
- 8
Serve the Waffles
Place warm waffles on plates, drizzle with maple syrup, top with marinated berries and a dollop of whipped mascarpone. Sprinkle candied pecans on top for an added crunch.
