    Prepare the Dough

    In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.

    Mix Ingredients

    Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    Preheat and Shape

    Preheat your oven to 475°F (245°C). Punch down the dough and divide it into 6 equal pieces. Roll each piece into a flat circle.

    Add Toppings

    Brush each flatbread with olive oil and sprinkle with za'atar. Add cheese and tomatoes if desired.

    Bake

    Place the flatbreads on a baking sheet and bake for 10-12 minutes until golden and crisp.

    Remove from the oven and let cool slightly before serving. Enjoy warm!
