    Make the Pastry Dough

    In a mixing bowl, combine the flour, sugar, and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Form into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

    Prepare the Filling

    In a separate bowl, mix together the chopped pistachios, rose water, honey, and cardamom powder until well combined. Set aside.

    Roll Out the Dough

    Once the dough has chilled, roll it out on a floured surface to about 1/4 inch thick. Cut into circles using a cookie cutter.

    Assemble the Pastries

    Place a spoonful of the pistachio filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.

    Bake the Pastries

    Preheat the oven to 375°F (190°C). Place the pastries on a lined baking sheet and bake for 20-25 minutes or until golden brown. Let cool before serving.
