Rinse the rice

Place the 1.5 cups rice in a fine-mesh sieve and rinse under cold running water, swishing with your hand, until the water runs mostly clear (about 30–60 seconds). This removes excess surface starch and helps the rice cook fluffy.

Toast (optional)

In a medium saucepan over medium heat, melt 1 tbsp unsalted butter. Add the rinsed and drained rice and toast, stirring, for 2–3 minutes until some kernels look slightly translucent and smell nutty. This step improves texture and flavor but can be skipped.

Simmer the rice

Add 2.25 cups water and 0.5 tsp kosher salt to the saucepan. Increase heat to bring to a gentle boil. Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer undisturbed for 15 minutes (for jasmine or long-grain white rice; check package directions if using different rice). Do not lift the lid during this time.

Rest

After 15 minutes, remove the pan from heat but keep it covered. Let the rice steam and rest for 10 minutes. This finishes cooking and helps achieve separate, fluffy grains.

While the rice cooks, finely mince 2 cloves garlic and 1/2 small shallot (or small yellow onion).

Heat 1 tsp olive oil in a small skillet over medium-low heat. Add the minced shallot and cook 2–3 minutes until translucent. Add the minced garlic and cook another 30–45 seconds until fragrant but not browned. Remove from heat.

When the rice has finished resting and you are ready to serve, gently fluff the rice with a fork. Transfer the rice to a serving bowl or leave in the pan, then fold in the cooked aromatics, 1 tsp lemon zest, 0.25 tsp freshly ground black pepper, and 1 tbsp chopped fresh parsley. Mix gently to avoid mashing the grains.

Brighten and garnish

Stir in 1 tsp fresh lemon juice to taste. Sprinkle 1 tsp toasted sesame seeds (or toasted sliced almonds) and 0.25 tsp flaky sea salt over the top. Taste and adjust seasoning with more salt or lemon juice if desired.

Serve warm as a versatile side for proteins, vegetables, or as the base for bowls. Leftover rice keeps well in an airtight container in the refrigerator for up to 4 days.
