Combo Sunsushi #2 (20 Makis)

Stir the active dry yeast and 1 tsp sugar into 1/4 cup warm water (about 105–115°F / 40–46°C). Let sit 5–8 minutes until foamy.

Activate yeast

In a large bowl, combine 3 cups all-purpose flour and 1 tsp fine sea salt. Make a well in the center.

Add the foamy yeast mixture, 1 cup room-temperature water, and 3 tbs olive oil to the flour. Mix with a wooden spoon until a shaggy dough forms.

Turn the dough onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic. If dough is too sticky, sprinkle up to 2 tbs more flour; if too dry, wet hands and continue kneading.

Place dough in a lightly oiled bowl, cover with plastic wrap or a damp cloth, and let rise in a warm draft-free place for 60–75 minutes, until doubled in size.

Punch down dough gently and divide in two (for two medium cocas) or keep whole for one large. Let rest 10 minutes before shaping.

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat; otherwise prepare a rimmed baking sheet with parchment.

While dough rises, thinly slice the yellow onions into half-moons and place them in a skillet with 2 tbs olive oil over medium-low heat.

Cook onions slowly, stirring occasionally, for 20–25 minutes until soft and beginning to caramelize. Add 1/2 tsp sugar about halfway through to aid caramelization. Season with 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat and let cool slightly.

Drain anchovy fillets briefly on paper towel if very oily. If you prefer less intense flavor, rinse quickly and pat dry; otherwise use as-is.

If using pimiento or roasted red pepper strips, cut into thin strips and set aside for garnish.

On a lightly floured surface, stretch or roll each dough portion into an oblong or rectangular shape roughly 10x14 inches (for two portions) about 1/4-inch thick. Transfer to parchment-lined baking sheet or a peel if using a stone.

Brush the dough lightly with 1 tbs olive oil. Distribute the caramelized onions evenly over the surface, leaving a small border around the edges.

Lay anchovy fillets in a decorative pattern across the onions (about 4 fillets per coca if divided in two). Add pimiento strips if using.

Optional: For a slightly crisper crust, dock the dough lightly with a fork in places not covered by toppings.

Bake in the hot oven on the middle rack (or on the preheated stone) for 10–14 minutes, until crust is golden-brown at edges and toppings are bubbling.

Remove from oven and let cool 3–5 minutes on the sheet. Drizzle with remaining 1 tbs olive oil, sprinkle with flaky sea salt to taste, and scatter chopped parsley over the top. Slice into rectangles or wedges and serve warm or at room temperature.

Taste and adjust seasoning: add a final pinch of coarse sea salt if desired and more parsley for freshness.

Store leftovers wrapped in foil or airtight container at room temperature for up to 24 hours; refrigerate up to 3 days and reheat in a 350°F (175°C) oven for 6–8 minutes to restore crispness.

Place the 1.5 cups rice in a fine-mesh sieve and rinse under cold running water, swishing with your hand, until the water runs mostly clear (about 30–60 seconds). This removes excess surface starch and helps the rice cook fluffy.

Rinse the rice

In a medium saucepan over medium heat, melt 1 tbsp unsalted butter. Add the rinsed and drained rice and toast, stirring, for 2–3 minutes until some kernels look slightly translucent and smell nutty. This step improves texture and flavor but can be skipped.

Toast (optional)

Add 2.25 cups water and 0.5 tsp kosher salt to the saucepan. Increase heat to bring to a gentle boil. Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer undisturbed for 15 minutes (for jasmine or long-grain white rice; check package directions if using different rice). Do not lift the lid during this time.

Simmer the rice

After 15 minutes, remove the pan from heat but keep it covered. Let the rice steam and rest for 10 minutes. This finishes cooking and helps achieve separate, fluffy grains.

Rest

While the rice cooks, finely mince 2 cloves garlic and 1/2 small shallot (or small yellow onion).

Prepare aromatics

Heat 1 tsp olive oil in a small skillet over medium-low heat. Add the minced shallot and cook 2–3 minutes until translucent. Add the minced garlic and cook another 30–45 seconds until fragrant but not browned. Remove from heat.

Sweat aromatics

When the rice has finished resting and you are ready to serve, gently fluff the rice with a fork. Transfer the rice to a serving bowl or leave in the pan, then fold in the cooked aromatics, 1 tsp lemon zest, 0.25 tsp freshly ground black pepper, and 1 tbsp chopped fresh parsley. Mix gently to avoid mashing the grains.

Combine with rice

Stir in 1 tsp fresh lemon juice to taste. Sprinkle 1 tsp toasted sesame seeds (or toasted sliced almonds) and 0.25 tsp flaky sea salt over the top. Taste and adjust seasoning with more salt or lemon juice if desired.

Brighten and garnish

Serve warm as a versatile side for proteins, vegetables, or as the base for bowls. Leftover rice keeps well in an airtight container in the refrigerator for up to 4 days.

Lava el arroz para sushi en agua fría hasta que el agua salga casi clara (3-4 enjuagues). Escurre 10-15 minutos. Coloca el arroz y 240 ml de agua en una olla con tapa; deja reposar 15 minutos, luego cocina a fuego medio-alto hasta que hierva, baja el fuego al mínimo y cuece 10-12 minutos. Apaga el fuego y deja reposar 10 minutos con la tapa puesta.

Lavar y cocer arroz

Mientras el arroz se cuece, mezcla 4 tbs de vinagre de arroz, 2 tbs de azúcar y 1 tsp de sal hasta disolver. Extiende el arroz cocido en un recipiente ancho (hangiri o bandeja), vierte la mezcla de vinagre sobre el arroz caliente y mezcla con una espátula en cortes suaves para enfriar y dar brillo. Ventila con un abanico o paño para que quede a temperatura tibia.

Temporizar el arroz

Cubre la esterilla de bambú con film plástico si la usas. Humedece tus manos con agua (y una gota de vinagre si prefieres) para evitar que el arroz se pegue. Coloca una hoja de nori con la cara brillante hacia abajo sobre la esterilla.

Preparar superficie

Extiende una capa uniforme de arroz sobre la nori dejando 1,5–2 cm libres en el borde superior. Coloca el relleno elegido (por ejemplo: tiras de salmón + aguacate; o surimi + pepino; o tempura de camarón + spicy mayo) en una línea centrada a lo largo. No sobrecargues: suficiente para 10 cortes por tabla. Enrolla firmemente con la esterilla presionando, sella el borde con un poco de agua. Repite para las 3 tablas (6 hojas de nori permiten 3 tablas si haces 2 por tabla, ajustar según tamaño).

Montar makis

Con un cuchillo muy afilado y húmedo, corta cada rollo en 10 piezas iguales: corta por la mitad, luego cada mitad en 5 piezas iguales (o corta en 10 de una vez). Limpia el cuchillo entre cortes para obtener piezas limpias. Ordena 10 cortes por tabla y repite hasta 30.

Cortar los makis

Corta el salmón en tiras largas y delgadas (6–8 mm de grosor). Corta el aguacate en láminas finas y el pepino en tiras finas sin semilla. Si usas surimi, sepáralo en hebras o córtalo en tiras. Si usas tempura de camarón, frita y escurre antes de montar. Ten listas las salsas opcionales (spicy mayo) en cucharas para colocar pequeñas cantidades dentro del rollo.

Cortar y preparar rellenos

Decide las 3 combinaciones (puedes repetir sabores). Ejemplos: 1) Salmón + aguacate; 2) Surimi + pepino + mayo; 3) Tempura camarón + spicy mayo. Asegúrate de que cada combinación tenga suficiente cantidad para 10 cortes por tabla.

Distribuir sabores

Sirve cada tabla de 10 makis con una porción individual de cada salsa indicada: una porción de salsa anguila (unagi dulce) para un sabor glaseado, una porción de salsa acevichada (mezcla cítrica con ají) para acompañar, y una porción de shoyu (soja) para mojar. Coloca jengibre encurtido y una pequeña porción de wasabi al lado.

Presentación de salsas

Para disfrutar: unta ligeramente con salsa anguila si deseas un toque dulce; usa la acevichada para un matiz cítrico/picante; usa shoyu para sabor tradicional. No mezcles demasiadas salsas en un solo bocado para mantener el balance.

Rinse 2 cups (uncooked) short-grain rice until water runs clear. Cook according to package (about 2 cups dry → ~4 cups cooked). While rice is hot, fold in 6 tbs sushi seasoning (rice vinegar mixed with 1½ tbs sugar and 1 tsp salt) in small increments, fanning to cool until slightly glossy. Keep covered with a damp cloth to prevent drying.

Prepare sushi rice

Lay out 10 nori sheets, bamboo mat (covered in plastic wrap), a small bowl of water (to wet fingers), and oil/wrap to prevent sticking. Toast 2 tsp sesame seeds in a dry pan until fragrant; set aside.

Prepare rolling station

Cut the salmon into long, thin strips about 1 cm wide and 10 cm long. Peel and slice the avocado into similar-length strips and toss gently with 1 tsp lime juice to prevent browning. Mix 2 tbs Japanese mayonnaise with a small pinch of salt; lightly toss a few salmon strips with 1 tbs mayo if you want a creamier texture.

Assemble rolls: place 1 nori sheet shiny side down on the mat. With wet fingers, spread a thin, even layer of rice (~1/2 cup) over the nori leaving a 2 cm strip at the top edge clear. Sprinkle a few toasted sesame seeds on the rice if desired. Flip the nori so rice faces down (optional for Hosomaki vs Uramaki). Place salmon and avocado strips across the center. Use the bamboo mat to roll tightly, pressing to seal the edge with a dab of water. Repeat to make 5 rolls for this flavor (each roll will be cut into 2 pieces to total 10 cuts) or make however you divide to reach 10 cuts. Let rolls rest seam-down for 2 minutes.

Cutting: Using a very sharp, wet knife, trim the edges and slice each roll into 10 pieces total across all rolls of this flavor (typical outcome: two or more rolls cut into 5 pieces each). Wipe knife between cuts to keep clean slices.

Combine 200 g diced sushi-grade tuna with 2 tbs spicy mayo (Sriracha mixed into Japanese mayo), 1 tsp sesame oil, and 1 tbsp thinly sliced green onion. Taste and adjust heat/salt.

Assemble rolls: repeat the same rolling procedure as for Salmon Avocado. Spread rice on 1 nori sheet, add a line of spicy tuna across the center. Roll tightly using the bamboo mat, seal with water, and rest seam-down. Make enough rolls so the final cut count for this flavor is 10 pieces total.

Cut the rolls with a wet sharp knife into equal pieces, wiping blade between cuts for clean slices.

Preheat oven to 220°C (430°F) if roasting, or heat 1 inch of oil in a skillet for shallow frying to medium-high. Pat wings dry with paper towel.

Season wings with 1 tsp salt, 1/2 tsp black pepper and 1 tsp baking powder. Toss to coat evenly. Let sit 10 minutes while you prepare sauce.

Roast method: place wings on a wire rack over a baking sheet lined with foil. Brush or spray lightly with 2 tbs vegetable oil. Roast 35–40 minutes, flipping once halfway, until skin is crisp and internal temp reaches 74°C (165°F). Fry method: carefully shallow fry wings for 8–10 minutes, turning, until crisp and cooked through. Drain on paper towels.

Toss wings in 60 ml of chosen wing sauce (Buffalo/BBQ/Teriyaki/Honey Soy) while hot so they glaze evenly. For teriyaki or honey-soy, warm the sauce in a small pan for 1–2 minutes before tossing to help it adhere.

Arrange 20 maki pieces on a serving platter grouped by flavor (10 of each). Place 6 glazed wings to one side. Add small ramekins with soy sauce (120 ml), spicy mayo (30 ml), eel/teriyaki sauce (30 ml) and sweet chili/BBQ (30 ml) as desired. Garnish the maki with a drizzle of eel sauce or extra sesame seeds. Serve pickled ginger and wasabi alongside.

Serve immediately while wings are warm and rice at room temperature.

Cocinar arroz para sushi siguiendo instrucciones del paquete para obtener aproximadamente 4 tazas cocidas (necesarias para ambas tablas: 2 cups por tabla). Enfriar ligeramente.

Mientras el arroz aún está caliente, mezclar 6 tbs de vinagre de arroz preparado (3 tbs por porción de 2 cups). Si no está preparado: mezclar vinagre de arroz con 1 tbs de azúcar y 1/2 tsp de sal por cada 3 tbs de vinagre y calentar hasta disolver. Incorporar con movimientos de corte y abanicar para enfriar y dar brillo. Cubrir con paño húmedo y mantener a temperatura ambiente.

En una cacerola pequeña combinar 60 ml de salsa de soja, 30 ml de mirin, 2 tbs de azúcar moreno y 1 tbs de miel. Calentar a fuego medio hasta que el azúcar se disuelva.

Disolver 1 tsp de maicena en 1 tbs de agua fría y añadir a la mezcla caliente, revolviendo constantemente hasta que espese ligeramente (30–60 segundos). Retirar del fuego y dejar enfriar. La salsa espesará más al enfriarse. Reservar en frasco.

En un bol mezclar 60 ml de mayonesa japonesa, 1 tsp de pasta de ají amarillo, 1 tbs de jugo de limón y 1 tbsp de cilantro finamente picado.

Probar y ajustar sal (añadir 1/4 tsp si hace falta). Si la mezcla está muy espesa, añadir hasta 1 tsp de agua para aligerar la textura. Enfriar hasta el montaje.

Cortar el salmón sashimi en tiras de aproximadamente 1–1.5 cm de ancho y 6–8 cm de largo. Mantener refrigerado hasta usar.

Cortar el aguacate a la mitad, retirar semilla y pelar. Cortar en tiras de 6–8 cm. Rociar ligeramente con unas gotas de jugo de limón si desea evitar oxidación.

Pelar y quitar semillas del pepino si es muy húmedo; cortar en tiras finas de 6–8 cm. Desmenuzar o cortar el kanikama en tiras largas.

Cubrir la esterilla de bambú con film plástico (opcional) para evitar que se pegue. Colocar una hoja de nori con el lado brillante hacia abajo.

Preparar la esterilla

Humedecer las manos con vinagre de arroz adicional para que el arroz no se pegue. Tomar aproximadamente 1 cup de arroz sazonado por hoja de nori (ajustar según grosor deseado) y extender una capa uniforme sobre el nori dejando 2 cm libres en el borde superior para sellar.

En el borde inferior del nori colocar tiras de salmón y aguacate en una línea. Si desea, añadir una pequeña línea de wasabi. No sobrecargar. Levantar la esterilla y comenzar a enrollar firmemente; presionar con la esterilla para compactar. Sellar el borde final con un poco de agua.

Relleno Maki A (Salmón y Aguacate)

Repetir el mismo procedimiento con la segunda hoja de nori: colocar tiras de pepino y kanikama, añadir una línea fina de mayonesa japonesa si desea cremosidad. Enrollar con la esterilla y sellar.

Relleno Maki B (Pepino y Kanikama)

Con un cuchillo bien afilado y humedecido, cortar cada rollo en 10 piezas iguales (limpiar el cuchillo entre cortes para cortes limpios). Esto producirá 10 cortes por sabor, total 20 makis.

Espolvorear opcionalmente semillas de sésamo sobre los cortes de cada tabla y acomodar en dos tablas/placas.

Colocar una pequeña cantidad de salsa anguila en un cuenco para servir junto a las tablas. Presentar también la acevichada en un cucharón pequeño o frasco para que los comensales la agreguen encima de los makis si lo desean.

Servir con soja, wasabi y jengibre encurtido a un lado. Recomendar consumir fresco inmediatamente; mantener el pescado refrigerado hasta el momento de consumir.
