    Separate and prepare egg whites

    Crack 4 eggs and carefully separate the whites into a large, clean bowl. Ensure no yolk is in the whites. If using carton egg whites, measure the equivalent volume (~1/2 cup per egg white).

    Add seasoning and optional cream

    Add 1 tsp fine sea salt, 1 tsp freshly ground black pepper, and 2 tbsp cream or milk (optional for extra silkiness) to the egg whites.

    Whisk to medium-stiff peaks

    Using a hand whisk or an electric mixer, whisk the egg whites until they form medium-stiff, glossy peaks. This takes about 2–4 minutes with an electric mixer and 4–6 minutes by hand. Stop when the whites hold shape but are still soft and pillowy.

    Heat the pan

    Place a nonstick or well-seasoned 8–10 inch skillet over medium-low heat. Add 1 tbsp unsalted butter and 1 tsp neutral oil (oil helps prevent the butter from burning). Swirl to coat the bottom of the pan and let the butter foam but not brown.

    Adjust heat

    Reduce the heat to low — the goal is gentle cooking so the omelette sets evenly without browning or becoming rubbery.

Cooking the Omelette

    Transfer and settle whites

    Pour the whipped egg whites into the warm skillet and quickly tilt the pan to distribute them into an even round. Use a spatula to gently pull the set edges toward the center to let uncooked whites flow to the edge, repeating around the pan for 30–60 seconds.

    Cover the skillet with a lid for 1–2 minutes to allow gentle steam to finish cooking the top without flipping. Check that the top is mostly set but still moist.

    If using fillings, scatter 1 oz grated cheese, 1 tbsp chopped herbs, and 1 oz sautéed mushrooms or spinach over one half of the omelette. Keep fillings modest so the omelette folds easily.

    Using a spatula, fold the omelette in half over the fillings. Let it cook for another 20–30 seconds covered to melt the cheese and finish cooking the center. The interior should be tender and slightly custardy, not dry.
