Steak
Bring steak to room temperature
Remove the New York strip from the refrigerator 30–45 minutes before cooking so it comes closer to room temperature. Pat dry thoroughly with paper towels.
Season
Generously season both sides and the edges of the steak with kosher salt and freshly ground black pepper, pressing the seasonings gently into the surface.
Baste and finish
Lower heat to medium. Add 1 tablespoon unsalted butter, the crushed garlic clove, and herb sprigs. Tilt the pan slightly and spoon the melted butter, garlic, and herbs over the steak repeatedly for 1–2 minutes to flavor and finish cooking. Use an instant-read thermometer if available: 125–130°F (52–54°C) for medium-rare.
Rest
Transfer the steak to a cutting board and tent loosely with foil. Rest for 5–10 minutes so juices redistribute before slicing.

Cook eggs — sunny-side up
In a small nonstick skillet, melt the remaining 1/2 tablespoon butter over medium-low heat. Crack the eggs gently into the pan, keeping yolks intact. Sprinkle 1/8–1/4 tsp salt and a pinch of pepper over the eggs. Cook slowly until whites are set but yolks remain runny, about 3–4 minutes. If you prefer the tops set, cover the pan for the last 30–60 seconds or spoon hot butter over the whites carefully.
Alternative egg styles
For over-easy, cook until whites are set then flip carefully and cook 10–20 seconds more. For scrambled, whisk eggs with a pinch of salt and cook low and slow, stirring until soft curds form.
