    Separate and Prepare

    Carefully separate 4 large egg whites into a clean, dry bowl. Make sure no yolk is in the whites. Let sit at room temperature for 10 minutes if you want quicker rise for fluffy method.

    Add a pinch of fine kosher salt and a pinch of freshly ground black pepper to the whites and gently whisk to combine for flat-style. For fluffy-style, do not mix in salt until the whites are partially whipped (salt can inhibit foam slightly).

Flat (Thin Omelet) Method

    Heat the pan

    Place a nonstick or well-seasoned skillet over medium heat. Add 1 tablespoon unsalted butter and 1 teaspoon neutral oil (optional). Swirl until butter is foaming and the surface is evenly coated but not smoking.

    Beat the whites

    Lightly whisk the egg whites just until uniform in color and slightly frothy (about 10–15 seconds). Do not incorporate a lot of air — the goal is a thin, tender omelet.

    Cook

    Pour the beaten whites into the hot pan, tilting to spread into an even layer about 1/8–1/4 inch thick. Reduce heat to medium-low. Cook undisturbed for 1–2 minutes until the underside is set and the top is mostly matte but still slightly moist.

    Add fillings (optional)

    If using add-ins (cheese, chives, mushrooms, tomato, spinach), scatter them evenly over one half of the omelet during the last 30–45 seconds of cooking so they warm through but don’t overcook.

    Fold and finish

    Use a spatula to fold the plain half over the fillings (or fold in thirds for a flat roll). Slide onto a plate and serve immediately.

Fluffy (Soufflé-Style) Method

    Whip the whites

    Using a clean, dry bowl and whisk or electric mixer, beat the egg whites on medium speed until soft peaks form (when you lift the whisk, peaks curl over). This takes about 1.5–3 minutes with a hand mixer, longer by hand. Toward the end, add the pinch of salt if you didn’t earlier.

    Prepare the pan

    Place a nonstick skillet over low-to-medium-low heat and add 1 tablespoon unsalted butter. Melt and swirl to coat. Keep heat lower than for flat method to avoid over-browning before set.

    Transfer and shape

    Gently spoon the whipped whites into the pan, mounding slightly so the omelet has height. Smooth the top lightly with the back of a spoon if desired.

    Cook slowly

    Cover the skillet with a lid to trap steam and cook for 2–4 minutes until the bottom is set and the top is mostly set but still slightly glossy. If you want the top fully set, you can finish under a preheated 350°F (175°C) oven for 1–2 minutes (use an ovenproof skillet).

    If using add-ins, gently press them into the center of the mound for the last 30–45 seconds so they warm. Fold one side over the other carefully, or slide onto a plate and top with fillings. Serve immediately to preserve the airy texture.

Fat for the Pan

    Use the unsalted butter (and optional oil) listed in the Fat for the Pan section for either method. Butter gives flavor and browning; adding a teaspoon of oil raises the smoke point if you prefer a slightly higher cooking temperature. Always preheat the fat until foaming but not browning.

Optional Add-ins (how to use)

    If using cheese, sprinkle toward the end of cooking so it melts but doesn’t separate. Vegetables like mushrooms or spinach should be lightly sautéed and drained of excess moisture before adding to prevent watering down the egg whites. Fresh herbs (chives) are best added right at the end to retain flavor and color. Tomatoes should be seeded and patted dry.
