Preparing the Base

    Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

    Whisk Sugar and Egg Yolks

    In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly add about half of the warm milk and cream mixture to the egg yolk mixture while stirring constantly. This will temper the yolks and prevent them from scrambling.

    Combine and Thicken

    Pour the tempered egg mixture back into the saucepan with the remaining milk and cream. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Cool and Add Vanilla

    Remove from heat and let the mixture cool to room temperature. Once cooled, stir in the vanilla extract.

Flavoring the Gelato

    Choose Your Flavor

    Divide the base mixture into separate bowls based on the number of flavors you want to create.

    Add Flavorings

    For chocolate gelato, mix in cocoa powder until fully incorporated. For strawberry gelato, fold in the pureed strawberries. For pistachio gelato, stir in the chopped pistachios. For coffee gelato, add the ground coffee and mix well. For mint gelato, add the chopped mint leaves.

    Chill the Mixture

    Cover each bowl with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the mixture to cool completely.

Churning and Freezing

    Churn the Gelato

    Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the churned gelato to an airtight container and freeze for at least 4 hours to firm up.
