Prepare the Dough

Activate the Yeast
In a small bowl, dissolve sugar in warm water. Sprinkle yeast over the top and let it sit for 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Stir until combined.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Form the Knots

Preheat the Oven
Preheat your oven to 375°F (190°C).

Shape the Knots
Punch down the risen dough and turn it out onto a floured surface. Divide the dough into 12 equal pieces. Roll each piece into a rope about 10 inches long, then tie it into a knot.

Place the knots on a greased baking sheet, spacing them about 2 inches apart.

Cover the knots with a damp cloth and let them rise for another 20-30 minutes.

Bake the knots in the preheated oven for 15-20 minutes, or until golden brown.
