Making the Cannoli Shells

Prepare the Dough
In a large mixing bowl, combine the flour, sugar, cocoa powder, and salt. Mix well.

Add the Wet Ingredients
Make a well in the center of the dry mixture and add the egg yolks, white wine or vinegar, and melted butter. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
After resting, roll out the dough to about 1/8 inch thickness. Cut into circles of approximately 4 inches in diameter.

Fry the Shells
Heat oil in a deep frying pan over medium heat. Wrap each dough circle around a cannoli tube and secure the edges with a little water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Making the Ricotta Filling

Prepare the Filling
In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Add Chocolate Chips
Fold in the mini chocolate chips until evenly distributed throughout the filling.

Fill the Cannoli
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta filling, ensuring they are generously filled.

Dust the filled cannoli with powdered sugar before serving for an elegant touch.
