Method
Preparation of the Topping
- 1
Chop the Tomatoes
Dice the fresh tomatoes into small pieces and place them in a medium-sized mixing bowl.
- 2
Mince the Garlic
Peel and finely mince the garlic cloves. Add them to the bowl with the diced tomatoes.
- 3
Add Basil
Rinse the fresh basil leaves, pat them dry, and chop them roughly. Add the chopped basil to the bowl.
- 4
Season the Mixture
Drizzle the extra virgin olive oil over the tomato mixture. Add salt and black pepper to taste. Mix everything gently until well combined.
Preparing the Bread
- 5
Slice the Bread
Cut the baguette or ciabatta into 1/2-inch thick slices.
- 6
Grill the Bread
Preheat a grill or grill pan over medium heat. Place the bread slices on the grill and cook for about 2-3 minutes on each side until they are golden brown and have grill marks.
- 7
Top with Tomato Mixture
Once the bread is grilled, remove it from the heat and spoon the prepared tomato topping generously onto each slice.
