Cooking Pasta

    Boil Pasta

    In a large pot, bring water to a boil. Add a pinch of salt for flavor.

    Add Pasta

    Once the water is boiling, add 8 cups of pasta and cook according to package instructions until al dente.

    Drain Pasta

    Once cooked, drain the pasta and set aside, reserving a cup of pasta water.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, wash and chop the zucchini, bell pepper, cherry tomatoes, carrot, and broccoli into bite-sized pieces.

    Sauté Vegetables

    In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes until tender.

    Add Garlic

    Mince the garlic and add it to the skillet with the vegetables. Sauté for an additional 1-2 minutes until fragrant.

Combining Ingredients

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss everything together.

    Season

    Add salt and black pepper to taste. If the pasta seems dry, add a little reserved pasta water to achieve desired consistency.

    Finish with Cheese

    Sprinkle the pasta primavera with Parmesan cheese and toss to combine. Serve immediately.
