Method
Prepare the Ice Cream

Scoop and Freeze
Scoop the ice cream into small balls (about 1-2 tablespoons each) and place them on a parchment-lined baking sheet. Freeze for at least 1-2 hours until firm.
Make the Mochi Dough

Combine Ingredients
In a microwave-safe bowl, mix the sweet rice flour, water, sugar, cornstarch, and salt until well combined.

Cook the Dough
Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, then cover and microwave for another minute. Stir again, then microwave for a final 30 seconds. The dough should be sticky and slightly translucent.

Cool the Dough
Let the mochi dough cool for a few minutes until it's manageable to handle.
Assemble the Mochi Ice Cream

Prepare the Surface
Dust a clean work surface with cornstarch to prevent sticking.

Shape the Mochi
Take a piece of the mochi dough (about the size of a golf ball) and flatten it into a disk with your hands. Make sure it's large enough to wrap around the ice cream ball.

Wrap the Ice Cream
Place a frozen ice cream ball in the center of the flattened mochi disk and carefully fold the edges over the ice cream, pinching to seal. Repeat with the remaining dough and ice cream.

Dust with Powdered Sugar
Roll the finished mochi ice cream balls in powdered sugar to prevent sticking.
Final Freeze

Freeze Again
Place the assembled mochi ice cream back on the parchment-lined baking sheet and freeze for at least another hour before serving.
