Preparation of Base

    Heat the Milk and Cream

    In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until the mixture is steaming but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and smooth.

    Combine and Thicken

    Slowly pour the hot milk mixture into the egg yolk mixture while whisking constantly. Once combined, return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).

    Cool the Base

    Remove the saucepan from the heat and stir in the vanilla extract. Pour the mixture into a bowl and allow it to cool to room temperature. Once cool, cover and refrigerate for at least 4 hours or overnight.

Flavoring and Churning

    Add Flavorings

    Once the base is chilled, stir in the flavoring of your choice (chocolate, fruit puree, coffee, or hazelnut paste) until fully incorporated.

    Churn the Mixture

    Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (about 20-25 minutes).

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 2-4 hours until firm.
