Prepare the Vegetables
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced bell pepper and onion, and sauté for about 5 minutes until they start to soften.

Cook the Bison
In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the ground bison and cook, breaking it up with a spatula, until browned and cooked through, about 6-8 minutes. Season with salt and pepper.

Combine Ingredients
Once the bison is cooked, add the sautéed vegetables to the skillet with the bison and mix well. Cook together for another 2-3 minutes to let the flavors meld.

Assemble the Cheesesteaks
Slice the Turano hoagie rolls lengthwise, leaving one side intact. Fill each roll with the bison and vegetable mixture, and top generously with shredded queso blanco.

Melt the Cheese
If desired, place the assembled hoagies under a broiler for 2-3 minutes to melt the cheese and toast the rolls slightly.

Serve
Remove from the broiler, let cool for a minute, then slice in half and serve immediately.
