Shake/Batchet Base

Draft/Topper

Method

Shake/Batchet Base

  1. 1

    Prepare glass

If rimming is desired, rub a grapefruit wedge around the rim of a 16–20 oz highball or Collins glass and dip the rim into salt or Tajín to lightly coat. Set glass aside.

  2. 2

    Combine spirits and citrus

In a cocktail shaker filled halfway with ice, add 3 fl oz blanco tequila, 0.5 fl oz mezcal, 0.75 fl oz fresh lime juice, and 0.5 fl oz simple syrup.

  3. 3

    Shake

Shake vigorously for 8–12 seconds until the shaker is well chilled and slightly frosted. This chills and dilutes the base enough to balance with the soda.

  4. 4

    Strain into glass

Fill the prepared glass with fresh ice (about 1 cup). Double-strain or fine-strain the shaken mixture into the glass to remove small ice shards and pulp.

Draft/Topper

  1. 5

Top the strained base with 4 fl oz chilled grapefruit soda. Pour gently over the back of a bar spoon or down the inside of the glass to preserve effervescence and create a layered look.

  2. 6

Give the drink one gentle stir (1–2 rotations) to integrate the soda with the spirit base without flattening carbonation.

Garnish & Serve

  1. 7

Garnish with one grapefruit wedge or a wheel on the rim or floated on top. Serve immediately with a straw if desired.

  2. 8

Optional: For a smokier note, flame a small piece of grapefruit peel briefly over the finished drink and drop it in, or increase mezcal to 0.75 fl oz per drink.
