Sponge Cake (Lemongrass-Soaked)

Sponge Cake (Lemongrass-Soaked)

    Prepare lemongrass infusion

    Bruise the trimmed lemongrass stalks with the back of a knife and place them in a heatproof cup. Pour 1 cup hot water over the stalks, cover, and steep for 20 minutes. Strain and reserve 3/4 cup of the infused liquid; discard solids.

    Make cake batter

    Preheat oven to 350°F (175°C). Grease and line a 9x13-inch baking pan. In a large bowl, whisk together eggs and 3 tbs granulated sugar until pale and slightly thickened (about 3–4 minutes by hand or 1–2 minutes with a mixer). Fold in sifted flour, baking powder, and salt gently until incorporated. Fold in melted butter and vanilla extract. Add 1/2 cup of the lemongrass infusion in place of an equal portion of liquid to keep batter consistency; batter should be light and pourable but not runny.

    Bake

    Pour batter into prepared pan, smooth top, and bake 18–22 minutes, or until a skewer comes out clean and top is lightly golden. Cool cake in pan on a wire rack for 10 minutes.

    Soak the cake with tres leches

    While cake cools, combine evaporated milk, sweetened condensed milk, and 1 cup whole milk with the remaining 1/4 cup lemongrass infusion. Stir until homogeneous. Poke holes all over the warm cake with a skewer or fork. Slowly pour the milk mixture evenly over the cake, allowing it to absorb. Chill the soaked cake in the refrigerator at least 2 hours (overnight preferred) so the cake fully soaks.

Toasted Milk Chantilly (Whipped Cream with Toasted Milk)

    Make toasted milk

    Preheat oven to 300°F (150°C). Pour 1 cup whole milk onto a shallow ovenproof dish and bake for 30–40 minutes, stirring halfway, until milk takes on a light toasty color and develops a subtle caramel aroma. Cool to room temperature and chill if necessary.

    Whip cream

    Combine chilled heavy cream, the toasted whole milk (cooled), 3 tbs granulated sugar, and vanilla. Whip on medium-high speed until soft to medium peaks form. Taste and adjust sugar if desired. Keep chilled until assembly. Note: toasted milk contributes flavor — if you prefer a denser chantilly, stabilize with 1 tbs powdered sugar or 1 tsp gelatin (bloomed and warmed) added while whipping.

Hibiscus Jelly

    Brew hibiscus

    Bring 3 cups water to a simmer. Add 1 cup dried hibiscus and 1 tbs sugar; simmer gently for 5 minutes until richly colored and fragrant. Remove from heat and let steep 10 minutes. Strain through a fine mesh sieve and measure 2 cups of the strained hibiscus liquid; discard solids or reserve for another use.

    Bloom gelatin and set jelly

    Sprinkle 2 tsp powdered gelatin over 2 tbs cold water and let bloom 5 minutes. Warm the bloomed gelatin gently until dissolved (do not boil). Whisk dissolved gelatin into 2 cups warm hibiscus infusion until combined. Pour into shallow tray to set (about 1/2-inch thickness) and refrigerate until firm, about 1–2 hours. Once set, cut into small cubes or use a small ring cutter for decorative pieces.

Dulce de Leche Pearls (Optional Spherification)

    Simple alternative — piped pearls

    If not using spherification: transfer dulce de leche to a piping bag fitted with a small round tip (or use a spoon) and pipe small mounds onto a parchment-lined tray. Chill to stabilize (30 minutes) before plating. These will resemble pearls when chilled.

    Spherification method (advanced, optional)

    If using alginate spherification: blend 1 cup dulce de leche with 1 tsp sodium alginate until smooth and no lumps remain. Slowly blend in 1 cup cold water to thin to a fluid consistency suitable for droplet formation. In a separate bowl dissolve 1 tsp calcium chloride in 4 cups water to create the setting bath. Using a syringe or small spoon, drop small droplets of the dulce/alginate mix into the calcium bath; allow spheres to set 30–60 seconds, then remove with slotted spoon and rinse in clean water. Store refrigerated and use within a few hours. Note: spherification requires precise measurements and food-safe equipment.

Assembly & Finishing

    Remove the soaked cake from the refrigerator. If the cake rose slightly while absorbing milk, level lightly with a knife or offset spatula to create a smooth surface for topping.

    Spread an even layer of the toasted milk chantilly over the top of the chilled tres leches — about 3/4 to 1 inch thick — using an offset spatula for a smooth finish.

    Scatter hibiscus jelly cubes or shapes decoratively across the top of the chantilly, concentrating a few clusters and leaving some exposed cream for contrast.

    Arrange dulce de leche pearls on top of the chantilly and around hibiscus pieces. If using piped dulce de leche mounds, place them sparingly to avoid overpowering sweetness.

    Dust lightly with powdered sugar if desired and garnish with edible hibiscus petals or microgreens. Keep refrigerated and serve chilled. Cut into 8–10 slices.
