Texas Strawberry Sherbet

    Make a simple strawberry purée base: combine the chopped strawberries and 2 tablespoons granulated sugar in a bowl and let macerate at room temperature for 20–30 minutes until juices are released.

    While strawberries macerate, make a simple syrup: in a small saucepan combine 1 cup sugar and 1 cup water. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat and allow to cool to lukewarm.

    After maceration, pulse the strawberries and any released juice in a blender or food processor until very smooth (about 30–45 seconds). For an ultra-smooth sherbet, pass the purée through a fine-mesh sieve, pressing to extract all liquid and discard seeds/pulp.

    Combine the strained strawberry purée with the cooled simple syrup, whole milk, corn syrup, lemon juice, and salt. Whisk until uniform. Chill the mixture thoroughly in the refrigerator (at least 2 hours, preferably overnight) so it's very cold before churning.

    Churn the chilled mixture in an ice-cream maker according to manufacturer’s instructions until it reaches a soft-sherbet consistency (about 20–30 minutes). If you don’t have an ice-cream maker, place the mixture in a shallow metal pan in the freezer and stir vigorously every 20–30 minutes for 2–3 hours to incorporate air and prevent large ice crystals.

Graham Streusel

    Preheat the oven to 350°F (175°C). Line a small baking sheet with parchment paper.

    In a medium bowl combine graham cracker crumbs, flour, and brown sugar. Add the cold cubed butter and, using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture clumps into coarse crumbs (pea-size to sandy texture).

    Scatter streusel on the prepared sheet in an even layer and bake 8–10 minutes, stirring once halfway through, until golden and fragrant. Remove and let cool completely on the tray; it will crisp as it cools.

Vanilla Cheesecake Swirl

    Beat the room-temperature cream cheese in a medium bowl until smooth using a hand mixer or whisk (about 1–2 minutes).

    Add powdered sugar, vanilla extract, heavy cream, and lemon zest (if using). Beat just until combined and the mixture is creamy and spreadable. Do not over-whip; the swirl should be soft enough to fold into the sherbet but stable enough to hold ribbons.

    Taste and adjust sweetness or vanilla as desired. Transfer the cheesecake mixture to a small bowl or piping bag for easier layering.

Assembly & Freeze

    Choose a loaf pan or shallow freezer container and line it with plastic wrap or parchment, leaving an overhang for easy removal.

    Spoon about one-third of the chilled churned strawberry sherbet into the container and spread an even layer (about 1/3 of total). Sprinkle roughly one-third of the cooled graham streusel over that layer.

    Dollop small spoonfuls of the vanilla cheesecake mixture over the streusel layer (use about 1/3 of the cheesecake mixture). Using a butter knife or skewer, gently swirl the cheese ribbons into the sherbet — do not overmix; aim for visible ribbons and pockets.

    Repeat: add another third of the sherbet, sprinkle another third of the streusel, and dollop another third of the cheesecake mixture; swirl gently.

    Finish with the remaining sherbet, pressing lightly to remove large air pockets. Sprinkle the remaining graham streusel evenly over the top, and add a few small dollops of leftover cheesecake mixture (for decorative swirls). If desired, garnish with fresh strawberry slices.

    Cover the surface with plastic wrap (pressing lightly to minimize frost), then cover the container with a lid or foil. Freeze until firm, at least 4–6 hours, preferably overnight.

    To serve, let the frozen helado sit at room temperature for 3–5 minutes to soften slightly, then lift out using the overhang, slice or scoop, and serve immediately.
