Sauté the Vegetables
Heat olive oil in a large skillet over medium heat. Add sliced mushrooms, onions, and green bell pepper. Sauté for about 5-7 minutes until the vegetables are soft and starting to caramelize. Season with salt and black pepper.
Assemble the Subs
Preheat your oven to 350°F (175°C). Slice the brioche sub rolls in half lengthwise. Place the bottom half of each roll on a baking sheet.
Add Cheese and Veggies
Layer provolone cheese slices on the bottom half of each roll. Then, spoon the sautéed mushroom, onion, and green pepper mixture evenly over the cheese.
Finish and Bake
Top with the other half of the sub roll. Bake in the preheated oven for about 10-15 minutes or until the cheese is melted and the rolls are lightly toasted.
Serve
Remove from the oven, let cool for a minute, then cut in half and serve warm.
