    Prepare the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water for about 15-20 minutes until fork-tender. Drain and return to pot.

    Make Garlic Mashed Potatoes

    Add butter, minced garlic, and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

    Prepare the Lamb

    Season the lamb T-bone steaks with salt and black pepper on both sides.

    Cook the Lamb

    Heat olive oil in a skillet over medium-high heat. Add the lamb steaks and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from heat and let rest.

    Make Mint Chimichurri

    In a food processor, combine fresh mint, red wine vinegar, minced garlic, olive oil, and red pepper flakes. Blend until smooth. Season with salt to taste.

    Serve

    Plate the garlic mashed potatoes and top with the lamb T-bone. Drizzle with mint chimichurri before serving.
