Preparation

  1. 1

    Clean the clams

Rinse the white clams under cold running water. Scrub the shells with a brush to remove any sand or grit. Discard any clams that are open and do not close when tapped.

  2. 2

    Prepare the vegetables

Peel the potato and cut it into small cubes. Remove the kernels from the ear of corn and set aside.

Cooking

  1. 3

    Cook the potato

In a large pot, bring water to a boil. Add the cubed potato and cook for about 10 minutes or until tender. Drain and set aside.

  2. 4

    Sauté garlic

In a large skillet over medium heat, add the olive oil and butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant.

  3. 5

    Add clams

Add the cleaned white clams to the skillet. Stir well and cover the skillet. Allow the clams to steam for about 5-7 minutes until they open.

  4. 6

    Add corn and potato

Once the clams are open, add the corn kernels and cooked potato to the skillet. Stir to combine and cook for an additional 2-3 minutes.

  5. 7

    Season the dish

Season with salt, black pepper, and lemon juice. Stir in chopped parsley just before serving.
