Method

Preparation

  1. 1

    Clean the Oysters

Rinse the fresh oysters under cold running water to remove any sand or grit. Drain them well and set aside.

  2. 2

    Prepare the Breading Station

In a shallow bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and paprika. In another bowl, beat the eggs and mix in the milk.

Breading the Oysters

  1. 3

    Bread the Oysters

Dip each oyster first into the flour mixture, ensuring it's fully coated, then into the egg and milk mixture, and finally back into the flour and cornmeal mixture. Press gently to adhere the breading.

Frying

  1. 4

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread in; if it bubbles and browns quickly, it's ready.

  2. 5

    Fry the Oysters

Carefully add the breaded oysters to the hot oil in batches. Fry for about 2-3 minutes on each side or until golden brown. Avoid overcrowding the pan to ensure even cooking.

  3. 6

    Drain and Serve

Once cooked, remove the oysters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately with lemon wedges.
