Prepare the Cod Fish
Cut the cod fish fillets into chunks (about 2 inches in size). Pat them dry with paper towels to remove excess moisture.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well to ensure even distribution of the dry ingredients.

Add Water
Gradually add cold water to the dry mixture, whisking until you achieve a smooth batter. The batter should be thick enough to coat the back of a spoon.

Heat the Oil
In a large, deep skillet or pot, heat the vegetable oil over medium-high heat. Use a thermometer to ensure the oil reaches a temperature of 350°F (175°C).

Fry the Cod Chunks
Dip each cod chunk into the batter, allowing excess batter to drip off. Carefully place the battered cod chunks into the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.

Cooking Time
Fry the cod chunks for about 4-5 minutes on each side or until they are golden brown and cooked through. Use a slotted spoon to remove the fish and place them on a plate lined with paper towels to drain excess oil.

Serve the fried cod fish hot with lemon wedges and tartar sauce on the side for dipping.
