Main Dish: Grilled Lemon Herb Chicken

Side Dish: Garlic Mashed Potatoes

Vegetable: Steamed Broccoli

Dessert: Chocolate Mousse

Method

Main Dish: Grilled Lemon Herb Chicken

  1. 1

    Prepare Marinade

In a bowl, combine olive oil, fresh lemon juice, minced garlic, chopped parsley, salt, and black pepper. Whisk until well mixed.

  2. 2

    Marinate Chicken

Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for more flavor.

  3. 3

    Grill Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Side Dish: Garlic Mashed Potatoes

  1. 4

    Cook Potatoes

In a large pot, add the quartered russet potatoes and cover them with water. Bring to a boil over medium-high heat and cook for about 15-20 minutes, or until tender.

  2. 5

    Mash Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, salt, and black pepper. Mash until smooth and creamy.

Vegetable: Steamed Broccoli

  1. 6

    Prepare Broccoli

In a saucepan, bring water to a boil. Place the broccoli florets in a steamer basket over the boiling water, cover, and steam for about 5-7 minutes until bright green and tender-crisp.

  2. 7

    Season Broccoli

Remove the broccoli from the steamer, transfer to a serving dish, and sprinkle with salt. Toss gently to combine.

Dessert: Chocolate Mousse

  1. 8

    Melt Chocolate

In a microwave-safe bowl, melt the chopped dark chocolate in short bursts, stirring in between until smooth. Let it cool slightly.

  2. 9

    Whip Cream

In a separate bowl, whip the heavy cream and sugar until soft peaks form. Add vanilla extract and continue whipping until stiff peaks form.

  3. 10

    Combine Mixtures

Gently fold the melted chocolate into the whipped cream until fully combined.

  4. 11

    Whip Egg Whites

In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no streaks remain.

  5. 12

    Chill Mousse

Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours before serving.
