    Cook the Sausage

    In a large skillet over medium heat, cook the white link sausage, breaking it into small pieces until fully cooked and browned, about 10-12 minutes. Remove from heat and let it cool slightly.

    Mix the Filling

    In a large mixing bowl, combine the cooked sausage, cooked rice, diced green bell pepper, onion, and celery. Add garlic powder, cayenne pepper, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Breading

    Prepare the Breading Stations

    Set up three bowls for breading: one for flour, one for beaten eggs, and one for breadcrumbs.

    Form the Balls

    With wet hands, take a portion of the sausage and rice mixture and form it into a ball about the size of a golf ball. Repeat until all mixture is used.

    Bread the Balls

    Roll each ball in flour, dip into beaten eggs, and then coat with breadcrumbs. Make sure each ball is evenly coated.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C) over medium-high heat.

    Fry the Boudin Balls

    Carefully place the breaded boudin balls into the hot oil, a few at a time. Fry for about 3-4 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
