    Make the Croquettes

    1. Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and let them cool slightly.

    2. In a mixing bowl, mash the potatoes and add the smoked salmon, green onions, beaten egg, bread crumbs, fresh dill, salt, and black pepper. Mix until well combined.

    3. Shape the mixture into small patties or croquettes.

    4. Heat olive oil in a frying pan over medium heat. Fry the croquettes for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.
